I intend to use airtime as just an icecast broadcasting client, and it is

installed on a server with no sound card.

As far as I can make out, this means I can't do any automatic recording?
It seems a little bizarre to me that recording requires hardware -- the core engine obviously

has complete access to what it is streaming out, so why couldn't it tee a copy to a local

file as well?

that's not implemented into airtime for now
(but for the future versions 2.4 or 2.5 this option will be available, in 3 or 6 months)
for the moment you can use another system like, mplayer, vlc, memcoder, etc for recording shows

I suppose if I was ambitious I might be able to go behind the scenes and write a liquidsoap script to write to a file?

you can do so, if you're in liquidsoap.
do you want to record anything (splitted hourly) or per-show?

In case you don't want to host any additional software yourself. I've created a similar application that will record your scheduled live shows.
