What about adding a CSS display:none for the relevant spans?

.time-elapsed, .time-remaining { display:none;}

after a bit of digging, poking and tweeking i've done it...

Glad to hear. As I guess you figured out, you can add CSS declarations to the (wait for it) CSS file, or put it inline in the HTML.

Another solution would have been to actually remove the <span> elements using javascript. The CSS merely hides them...
