You can do this in Airtime under System -> Streams

On the right side under 'Output Stream Settings', expand 'Additional Details' and you will see the name field there.

I've found it :

Edit /etc/airtime/liquidsoap.cfg

find : s1_name = "Airtime!" and change the value.

**EDIT**

Unfortunately, the file is rewritten everytime... So I didn't find a way yet to edit this.
